The 100 by 100 centimetre grow table on castors is the same table as the fixed version with wheels underneath. That sounds minor and mostly changes what you can do with the space around it.

What being movable buys

Cleaning without clearing. The floor under a fixed table can only be reached by emptying it. On castors you roll it aside, sweep and mop underneath, and roll it back. On a crop where you clean thoroughly between rounds, that is the difference between doing it and not.

Reaching the back. With the table against a wall the back plants are awkward. Turn it half a revolution and the back is the front. On plants that spread towards the end of a crop, that makes a real difference to how well you tend them.

Changing the layout. Rooms are rarely arranged correctly first time. On castors you move a complete crop without carrying pots.

What to watch

Castors are only pleasant if the table stays put when it should. Lock them once it is in position, particularly with a filled Danish tray of water on top: that is considerable weight you do not want moving accidentally.

Mind your floor too. Wheels roll well on concrete and tiles, and far less well on an uneven or soft surface.
