The mechanism holds while you let go
Hanging a lamp with rope is a two-handed job and usually a two-person one. You hold the weight up, judge the height, then tie a knot with your other hand that will not slip while you are still holding on.
A ratchet takes that over. Pull the rope through until the height is right and let go: the toothed wheel catches and holds the load. Lowering is done by pinching the pawl and paying out. So you never have both the weight and the knot in hand at once, and you can judge at eye level whether the lamp hangs level instead of guessing from a step ladder.
It is also why a ratchet gets adjusted more often than a knot does. Correcting five centimetres because the crop has stretched takes half a minute, which means you actually do it rather than leaving the lamp wherever it happens to hang.
