Stepped or stepless: what the difference is in practice
This is the first choice you make when controlling a fan, and it is worth a multiple in price.
A stepped controller like this one switches between a low and a high setting. If it gets too warm the fan goes to high; as it cools it drops back. The transition is a jump, not a gradual movement.
A stepless controller follows the temperature continuously and holds your extraction at exactly the speed needed at that moment.

Check your fan's rating plate for its current draw in amps. Stay comfortably under 4 A, because a motor briefly draws more than its rated current on startup.
Can I run two fans from it?
Only if their combined draw stays well within 4 A. When in doubt, a heavier controller is the safer choice.
Does it control my intake as well?
It controls whatever you connect, intake or extraction. To control both separately you need two controllers or a twin version.
Will I hear a hum?
