Setting a range rather than a speed

On this model you set three things: the target temperature, a minimum extraction speed and a maximum. Those last two are what separates this from an ordinary controller, and they deserve explaining because they are rarely used well.

The minimum is a floor that keeps running. Even when it is cool enough you want baseline extraction: moisture has to leave, fresh air has to enter, and your carbon filter only works while air passes through it. Set the minimum to zero and on a cold night the tent can stop entirely while humidity climbs.

The maximum is a ceiling. With it you limit how hard it may work in heat, because your filter or ducting only handles so much, or because you want to cap noise at night.

Between those two limits the extractor regulates itself on the measured temperature. So you are not setting a speed but a behaviour: never less than this, never more than that, and as much as needed in between.

A sensible starting point is the minimum at the lowest setting your humidity control can live with, and the maximum at your filter's capacity.
